Ingredients
 

  • 8 oz pasta such as penne or rotini
  • 2 tablespoons olive oil
  • 2 large onions thinly sliced
  • 3 cloves garlic minced
  • 4 cups beef broth or vegetable broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • Salt and black pepper to taste
  • 1 cup shredded Gruyère cheese or Swiss cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley chopped (for garnish, optional)

Instructions

  • Sauté the Onions: In a large pot or skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for about 10-12 minutes, stirring occasionally, until they are caramelized and golden brown.
  • Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.
  • Combine Ingredients: Add the pasta to the pot, followed by the beef broth, balsamic vinegar, thyme, salt, and pepper. Stir to combine.
  • Cook the Pasta: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 10-12 minutes, or until the pasta is cooked al dente and the liquid has mostly absorbed.
  • Add Cheese: Once the pasta is cooked, remove the pot from the heat. Stir in the shredded Gruyère and grated Parmesan cheese until melted and creamy.
  • Serve: Garnish with fresh parsley if desired and serve warm.
