  • 1.5 cups graham cracker crumbs finely crushed
  • 0.5 cups unsalted butter melted
  • 2 cups sweetened shredded coconut divided
  • 1 package instant vanilla pudding mix 3.4 oz package
  • 1 cups whole milk
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 16 oz frozen whipped topping thawed

Instructions

Preparation Steps

  • In a medium bowl, mix graham cracker crumbs with melted butter until well combined. Press into the bottom of a 9x13 inch pan to form a crust.
  • Sprinkle 1 cup of shredded coconut evenly over the crust.
  • In another bowl, whisk together pudding mix and milk. Let it sit for 2 minutes until thickened.
  • In a large bowl, beat cream cheese until smooth. Gradually add powdered sugar and mix until combined. Fold in half of the whipped topping.
  • Spread cream cheese mixture over the prepared crust. Layer with vanilla pudding, followed by the remaining whipped topping.
  • Sprinkle remaining coconut on top. Cover and refrigerate for at least 4 hours or overnight.

Notes

Ensure cream cheese is at room temperature for easy mixing.
