Instructions
Preparation Steps
In a medium bowl, mix graham cracker crumbs with melted butter until well combined. Press into the bottom of a 9x13 inch pan to form a crust.
Sprinkle 1 cup of shredded coconut evenly over the crust.
In another bowl, whisk together pudding mix and milk. Let it sit for 2 minutes until thickened.
In a large bowl, beat cream cheese until smooth. Gradually add powdered sugar and mix until combined. Fold in half of the whipped topping.
Spread cream cheese mixture over the prepared crust. Layer with vanilla pudding, followed by the remaining whipped topping.
Sprinkle remaining coconut on top. Cover and refrigerate for at least 4 hours or overnight.

Ensure cream cheese is at room temperature for easy mixing.
