  • 1.5 lbs chicken thighs bone-in, skinless
  • 0.25 cup olive oil
  • 1 lemon sliced
  • 0.5 cup green olives pitted
  • 2 cloves garlic minced
  • 1 tsp oregano dried
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • In a large ovenproof skillet, heat olive oil over medium heat. Add chicken thighs and cook until golden brown on both sides, about 5 minutes per side. Remove chicken and set aside.
  • In the same skillet, add lemon slices, olives, and garlic. Cook for 2-3 minutes until garlic is fragrant.
  • Return chicken to the skillet. Sprinkle with oregano, salt, and black pepper.
  • Transfer skillet to the preheated oven and bake for 25-30 minutes until chicken is cooked through.
  • Serve the chicken hot, drizzled with pan juices.

Notes

For a spicier dish, add a pinch of red pepper flakes. This recipe can be paired with a side of couscous or a fresh salad.
