Ingredients
 

  • 0.5 lb 1 cup unsalted butter, softened
  • 0.5 lb 1 cup granulated sugar
  • 1 large egg
  • Zest of 1 large lemon
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 0.75 lb 1 1/2 cups all-purpose flour
  • 0.25 lb 1/2 teaspoon baking powder
  • 0.125 lb 1/4 teaspoon baking soda
  • Pinch of salt
  • Extra granulated sugar for rolling optional

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy.
  • Add Wet Ingredients: Mix in the egg, lemon zest, lemon juice, and vanilla extract until fully incorporated.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Mix the Dough: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Shape the Cookies: Scoop about 1 tablespoon of dough at a time and roll it into balls. If desired, roll the dough balls in granulated sugar for a sparkly finish.
  • Bake: Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Cool: Allow the cookies to cool on the baking sheet for 2-3 minutes, then transfer to a wire rack to cool completely.
