  • Heat the olive oil in a large saucepan over medium heat.
  • Add the Arborio rice and cook, stirring constantly, until lightly toasted.
  • Gradually add the chicken broth, one cup at a time, stirring constantly until absorbed before adding the next cup.
  • Once the rice is creamy and al dente, stir in the parmesan cheese.
  • Finish with lemon zest and juice. Serve immediately.
