Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Lightly grease an 8x8 inch baking dish.
In a medium bowl, combine flour, softened butter, 1/4 cup sugar, and lemon zest to form a crumbly mixture for the crust.
Press the mixture evenly into the prepared baking dish. Bake for 15 minutes or until lightly golden.
In another bowl, whisk together the eggs, 1 cup sugar, lemon juice, baking powder, and salt until smooth. Gently fold in the blueberries.
Pour the blueberry mixture over the baked crust and return to the oven. Bake for an additional 25 minutes, or until the filling is set.
Allow the dessert to cool completely in the pan. Cut into squares and serve.
