  • 0.25 cup granulated sugar for the crust
  • 1 tablespoon lemon zest freshly grated
  • 3 large eggs
  • 1 cup granulated sugar for the filling
  • 0.5 cup fresh lemon juice
  • 1 cup fresh blueberries washed
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C). Lightly grease an 8x8 inch baking dish.
  • In a medium bowl, combine flour, softened butter, 1/4 cup sugar, and lemon zest to form a crumbly mixture for the crust.
  • Press the mixture evenly into the prepared baking dish. Bake for 15 minutes or until lightly golden.
  • In another bowl, whisk together the eggs, 1 cup sugar, lemon juice, baking powder, and salt until smooth. Gently fold in the blueberries.
  • Pour the blueberry mixture over the baked crust and return to the oven. Bake for an additional 25 minutes, or until the filling is set.
  • Allow the dessert to cool completely in the pan. Cut into squares and serve.
