Instructions
Preparation Steps
Preheat your oven to 350°F (175°C).
In a large bowl, cream together the softened butter and erythritol until smooth.
Add the egg and vanilla extract, and mix until combined.
Gradually add the almond flour and baking powder, mixing until a dough forms.
Fold in the chocolate chips.
Scoop tablespoons of dough onto a lined baking sheet, flattening each cookie slightly with the back of a spoon.
Bake for 10 minutes or until the cookies are golden around the edges.
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
