Main Ingredients

  • 8 oz pasta penne or any short pasta
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 6 cups kale roughly chopped
  • 1 cup feta cheese crumbled
  • 2 cups vegetable broth

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add minced garlic and sauté until fragrant.
  • Add chopped kale and cook for 2-3 minutes until slightly wilted.
  • Stir in pasta and vegetable broth. Bring to a boil.
  • Reduce heat and let it simmer until pasta is cooked and broth is absorbed, about 10-12 minutes.
  • Stir in crumbled feta cheese and serve hot.

Notes

Feel free to add some red pepper flakes for a spicy kick.
