  • 12 pound whole turkey thawed if frozen
  • 0.5 cup unsalted butter melted
  • 1 tablespoon salt or to taste
  • 1 teaspoon black pepper freshly ground
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 whole lemon halved
  • 1 whole onion quartered

Instructions

Preparation Steps

  • Preheat your oven to 325°F (165°C).
  • Remove giblets from the turkey cavity. Pat the turkey dry with paper towels.
  • Rub the melted butter all over the turkey. Season with salt, pepper, rosemary, and thyme.
  • Place the lemon and onion inside the turkey cavity.
  • Tie the legs together with kitchen twine. Tuck the wing tips under the body.
  • Place the turkey on a roasting rack set in a roasting pan.
  • Roast the turkey for approximately 4 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  • Let the turkey rest for 20-30 minutes before carving. This allows the juices to redistribute.

Notes

For the best results, baste the turkey with its juices every hour while roasting.
