Ingredients
 

  • 4 boneless skinless chicken breasts
  • 1 cup jalapeño peppers diced (seeds removed for less heat)
  • 1 cup cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/2 teaspoon smoked paprika optional
  • Fresh cilantro or parsley chopped (for garnish, optional)

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Filling: In a mixing bowl, combine the softened cream cheese, diced jalapeños, shredded cheddar cheese, sour cream, garlic powder, onion powder, smoked paprika (if using), and salt and pepper. Mix until well combined.
  • Stuff the Chicken: Use a sharp knife to create a pocket in each chicken breast. Stuff each pocket generously with the jalapeño cheese mixture.
  • Sear the Chicken: In an oven-safe skillet, heat the olive oil over medium-high heat. Season the outside of the chicken breasts with salt and pepper. Sear the stuffed chicken breasts for about 3-4 minutes on each side, until golden brown.
  • Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C).
  • Serve: Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh cilantro or parsley if desired, and serve warm.
