  • 1 cup Jasmine rice rinsed and drained
  • 1.25 cup water
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 1 tablespoon lime juice freshly squeezed
  • 0.25 cup cilantro chopped
  • 1 teaspoon lime zest from one lime

Instructions

Preparation Steps

  • Add olive oil to the Instant Pot and set to sauté function. Add rinsed rice and toast for 2 minutes, stirring frequently.
  • Add water and salt, then secure the lid and set Instant Pot to manual pressure cook for 4 minutes.
  • Allow 10 minutes for natural pressure release, then manually release any remaining pressure.
  • Stir in lime juice, lime zest, and cilantro before serving.

Notes

For an extra zing, add more lime juice to taste.
