Instructions
Preparation Steps
Add olive oil to the Instant Pot and set to sauté function. Add rinsed rice and toast for 2 minutes, stirring frequently.
Add water and salt, then secure the lid and set Instant Pot to manual pressure cook for 4 minutes.
Allow 10 minutes for natural pressure release, then manually release any remaining pressure.
Stir in lime juice, lime zest, and cilantro before serving.
Notes
For an extra zing, add more lime juice to taste.
