How to Make Strawberry Cheesecake French Toast Roll Ups

Ingredients
 

For the Roll-Ups:

  • 8-10 slices of white sandwich bread crusts removed
  • 4 ounces cream cheese softened
  • 1/2 cup strawberries finely chopped
  • 1/4 cup granulated sugar or to taste
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon cinnamon
  • 1/4 cup granulated sugar for the egg mixture
  • Butter for frying

For Serving:

  • Powdered sugar for dusting
  • Maple syrup optional
  • Extra sliced strawberries

Instructions

Prepare the Filling:

  • In a small bowl, mix together the softened cream cheese, chopped strawberries, 1/4 cup granulated sugar, and vanilla extract until well combined.

Flatten the Bread:

  • Use a rolling pin to flatten the bread slices to about 1/8-inch thickness, making them easier to roll without breaking.

Assemble the Roll-Ups:

  • Spread a generous amount of the strawberry cream cheese mixture on each flattened bread slice, leaving a small border around the edges to prevent spilling.
  • Roll up each slice tightly and set aside.

Prepare the Egg Mixture:

  • In a shallow dish, whisk together the eggs, milk, cinnamon, and 1/4 cup granulated sugar.

Cook the Roll-Ups:

  • Heat a skillet over medium heat and add a bit of butter.
  • Dip each roll-up in the egg mixture, allowing excess to drip off.
  • Place the roll-ups in the skillet, seam side down, and cook until golden brown on all sides, turning as needed. This usually takes about 2-3 minutes per side.

Serve:

  • Remove the cooked roll-ups from the skillet and immediately dust with powdered sugar.
  • Serve hot with additional strawberry slices and maple syrup if desired.
