How to Make Delicious Garlic Parmesan Chicken Skewers

Ingredients
 

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 3-4 cloves garlic minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh parsley chopped (plus more for garnish)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes optional, for added heat
  • Wooden skewers soaked in water for at least 30 minutes

Instructions

Marinate the Chicken:

  • In a large bowl, combine the olive oil, grated Parmesan, minced garlic, lemon juice, chopped parsley, salt, pepper, and red pepper flakes (if using).
  • Add the chicken pieces to the bowl and toss to coat them well with the marinade. Cover and refrigerate for at least 30 minutes, or up to a few hours for more flavor.

Prepare the Skewers:

  • Thread the marinated chicken pieces onto the soaked wooden skewers.

Preheat the Grill:

  • Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled.

Grill the Skewers:

  • Grill the chicken skewers for 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through with an internal temperature of 165°F (75°C).

Serve:

  • Remove the chicken skewers from the grill and let them rest for a few minutes. Garnish with additional chopped parsley and a sprinkle of Parmesan cheese before serving.
