How To Make Delicious Chicken Zucchini Corn Burger Recipe

Ingredients
 

  • 1 pound ground chicken
  • 1 cup zucchini grated and excess water squeezed out
  • 1/2 cup fresh corn kernels from about 1 ear of corn
  • 1/4 cup breadcrumbs or panko
  • 1 large egg
  • 2 tablespoons fresh herbs like parsley, cilantro, or chives, finely chopped
  • 1 garlic clove minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

Prepare the Ingredients:

  • Grate the zucchini and use a clean kitchen towel or paper towels to squeeze out as much moisture as possible.
  • If using corn on the cob, remove the kernels from the cob using a sharp knife.

Make the Burger Mixture:

  • In a large bowl, combine the ground chicken, grated zucchini, fresh corn kernels, breadcrumbs, egg, chopped herbs, minced garlic, salt, and pepper.
  • Mix until well combined but avoid overmixing to keep the burgers tender.

Form the Burgers:

  • Divide the mixture into 4-6 portions, depending on the desired size, and shape each portion into a patty.

Cook the Burgers:

  • Heat a drizzle of olive oil in a large skillet or grill pan over medium heat.
  • Cook the burgers for 5-6 minutes on each side, or until fully cooked through and golden brown on the outside. The internal temperature should reach 165°F (74°C) for chicken.

Serve:

  • Serve the chicken, zucchini, and corn burgers on buns with your favorite toppings such as lettuce, tomato, onion, avocado, or a dollop of mayonnaise or your preferred sauce.
