How to Make Cucumber Bites with Herbed Cream Cheese and Cherry Tomato

These delightful, bite-sized snacks are perfect for parties, brunches, or a refreshing treat on a hot day. The cool crunch of cucumber pairs beautifully with the creamy, herby cheese and the burst of juicy cherry tomatoes.

Ingredients
 

  • 2 large cucumbers
  • 1 package 8 oz cream cheese, softened
  • 2 tablespoons fresh dill chopped (or 1 tablespoon dried dill)
  • 2 tablespoons fresh chives chopped
  • 1 tablespoon fresh parsley chopped
  • 1 clove garlic minced
  • Salt and pepper to taste
  • 1 pint cherry tomatoes halved
  • Fresh dill sprigs or additional chives for garnish (optional)

Instructions

  • Prepare the Cucumbers:
  • Wash the cucumbers and peel them if desired. Slice them into 1/2-inch thick rounds.
  • Use a small spoon or melon baller to scoop out a small indentation in the center of each cucumber slice, being careful not to scoop all the way through. This will hold the cream cheese mixture.
  • Make the Herbed Cream Cheese:
  • In a medium bowl, mix the softened cream cheese with the chopped dill, chives, parsley, minced garlic, salt, and pepper until well combined.
  • Assemble the Cucumber Bites:
  • Using a small spoon or a piping bag fitted with a star tip, fill each cucumber cup with the herbed cream cheese mixture.
  • Top each filled cucumber slice with a cherry tomato half, cut side down.
  • Garnish:
  • Garnish with fresh dill sprigs or additional chopped chives, if desired.
  • Serve:
  • Arrange the cucumber bites on a serving platter and serve immediately, or refrigerate until ready to serve.
