Ingredients

  • 1 pound steak such as sirloin or ribeye, cut into 1-inch cubes
  • 1 pound baby potatoes halved or quartered depending on size
  • 3 tablespoons olive oil divided
  • Salt and pepper to taste
  • 4 cloves garlic minced
  • 4 tablespoons unsalted butter
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
  • Fresh parsley chopped for garnish

Instructions

Preheat the Air Fryer:

  • Preheat your air fryer to 400°F (200°C).

Prepare the Potatoes:

  • In a bowl, toss the potatoes with 2 tablespoons of olive oil, salt, and pepper.
  • Place the potatoes in the air fryer basket and cook for 10-15 minutes, or until they start to become tender and crispy, shaking the basket halfway through cooking.

Season the Steak:

  • While the potatoes are cooking, toss the steak bites with the remaining 1 tablespoon of olive oil, salt, and pepper.

Cook the Steak:

  • Remove the basket and push the potatoes to one side. Add the steak bites to the other side of the air fryer basket.
  • Return the basket to the air fryer and cook for an additional 4-6 minutes, or until the steak reaches your desired level of doneness. Shake the basket or use tongs to turn the steak and potatoes halfway through cooking.

Make the Garlic Butter Sauce:

  • While the steak and potatoes are cooking, melt the butter in a small skillet over medium heat.
  • Add the minced garlic and thyme, cooking until the garlic is fragrant and slightly golden, about 1-2 minutes. Remove from heat.

Combine and Serve:

  • Transfer the cooked steak and potatoes to a serving dish. Pour the garlic butter sauce over the steak and potatoes, tossing to coat evenly.
  • Garnish with chopped fresh parsley before serving.
