How to Make a Savory Oatmeal Bowl with Mushrooms and Spinach

Ingredients
 

  • 1 cup rolled oats
  • 2 cups water
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup mushrooms sliced
  • 2 cups fresh spinach
  • 4 large eggs
  • Red pepper flakes for garnish optional
  • Chopped chives for garnish optional
  • Grated Parmesan cheese for topping optional

Instructions

  • Bring two cups of water to a boil in a saucepan. Add a bit of salt and the rolled oats and stir.
  • Reduce the heat to low, cover, and simmer for about 5-7 minutes, stirring occasionally, until the oats are cooked to your desired consistency.
  • While the oats are cooking, heat olive oil in a skillet over medium heat.
  • Add sliced mushrooms to the skillet and sauté until they are golden brown and cooked through.
  • Cook the fresh spinach in the skillet until it wilts. To taste, add salt and pepper for seasoning.
  • In a separate pan, fry the eggs to your liking.
  • Divide the cooked oats among serving bowls.
  • Top the oats with the sautéed mushrooms and spinach mixture.
  • A fried egg should be placed atop each bowl.
  • Garnish with red pepper flakes and chopped chives if desired.
  • Optionally, sprinkle grated Parmesan cheese over the bowls.
