How to Make a Delicious Nutella Pancake Sandwich

Ingredients
 

For the Pancakes:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk or 1 cup milk plus 1 tablespoon vinegar or lemon juice, let stand 5 minutes
  • 1 large egg
  • 2 tablespoons melted butter or vegetable oil plus more for cooking

For the Filling:

  • Nutella or any other chocolate hazelnut spread

For Frying:

  • Butter or vegetable oil

Instructions

Make the Pancake Batter:

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, beat the buttermilk, egg, and 2 tablespoons of melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy.

Cook the Pancakes:

  • Heat a skillet over medium heat and coat with a small amount of butter or oil.
  • Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  • Repeat with the remaining batter. You'll need at least two pancakes per sandwich.

Assemble the Sandwich:

  • Spread a generous amount of Nutella on one side of a pancake.
  • Top with another pancake to form a sandwich.

Fry the Pancake Sandwich:

  • Wipe out the skillet and add a bit more butter or oil.
  • Place the pancake sandwich back in the skillet. Fry each side until crispy and slightly golden, about 1-2 minutes per side. This step gives the sandwich a delightful texture and warms the Nutella filling.

Serve:

  • Remove the sandwich from the skillet and let it cool for a minute.
  • Cut the sandwich into halves or quarters.
  • Optionally, dust with powdered sugar or drizzle with more Nutella or your favorite syrup before serving.
