Instructions
Make the Pancake Batter:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, beat the buttermilk, egg, and 2 tablespoons of melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy.
Cook the Pancakes:
Heat a skillet over medium heat and coat with a small amount of butter or oil.
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Repeat with the remaining batter. You'll need at least two pancakes per sandwich.
Assemble the Sandwich:
Spread a generous amount of Nutella on one side of a pancake.
Top with another pancake to form a sandwich.
Fry the Pancake Sandwich:
Wipe out the skillet and add a bit more butter or oil.
Place the pancake sandwich back in the skillet. Fry each side until crispy and slightly golden, about 1-2 minutes per side. This step gives the sandwich a delightful texture and warms the Nutella filling.
Serve:
Remove the sandwich from the skillet and let it cool for a minute.
Cut the sandwich into halves or quarters.
Optionally, dust with powdered sugar or drizzle with more Nutella or your favorite syrup before serving.
