Heat the water in a small saucepan until it gently simmers.
Stir in the ginger and steep off heat for 2–3 minutes, then strain if desired.
Whisk in the honey until fully dissolved.
Add the lemon juice and taste; adjust honey or lemon as you like.
Pour into mugs and serve warm.
Notes
Variation: Add a cinnamon stick while heating the water, or finish with a splash of chamomile for a floral note. For a stronger flavor, make a concentrate with 1 cup water and the same honey and lemon, then dilute with hot water to taste.
