Ingredients

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced (or 1 teaspoon ground ginger)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon cornstarch optional, for thickening
  • 2 tablespoons water optional, for thickening
  • Green onions chopped (for garnish)
  • Sesame seeds optional, for garnish

Instructions

  • Prepare the Chicken: Season the chicken pieces with salt and black pepper.
  • Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook for about 5-7 minutes, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Make the Sauce: In the same skillet, reduce the heat to medium and add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
  • Add Honey and Soy Sauce: Stir in the honey, soy sauce, and rice vinegar. Bring the mixture to a simmer.
  • Thicken the Sauce (optional): If you prefer a thicker sauce, mix the cornstarch with water in a small bowl to create a slurry. Slowly stir the slurry into the sauce and cook for another minute until it thickens.
  • Combine Chicken and Sauce: Return the cooked chicken to the skillet, tossing it in the sauce until evenly coated and heated through.
  • Garnish and Serve: Remove from heat and garnish with chopped green onions and sesame seeds if desired. Serve warm over rice or with vegetables.
