  • 3 large egg yolks room temperature
  • 1 tablespoon lemon juice freshly squeezed
  • 0.5 cup unsalted butter melted
  • 1 pinch cayenne pepper optional
  • 1 pinch salt

Instructions

Preparation Steps

  • In a small mixing bowl, whisk together the egg yolks and lemon juice until the mixture is thickened and doubled in volume.
  • Place the bowl over a saucepan of simmering water (ensure the bowl does not touch the water). Continue to whisk rapidly.
  • Slowly drizzle the melted butter into the egg yolk mixture, whisking continuously, until fully incorporated and the sauce is thick.
  • Remove from heat, add cayenne and salt to taste. Serve immediately or keep warm until needed.

Notes

For best results, use fresh lemon juice and real butter. Perfect on eggs Benedict or drizzled over steamed vegetables.
