Ingredients
 

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1/2 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup crushed pineapple drained
  • 1/4 cup shredded sweetened coconut
  • 3 medium ripe bananas mashed
  • 1/2 cup chopped macadamia nuts optional
  • 1 teaspoon cinnamon optional, for added flavor

Instructions

  • Preheat Oven:
  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper.
  • Mix Dry Ingredients:
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Set aside.
  • Combine Wet Ingredients:
  • In a large mixing bowl, beat the eggs, granulated sugar, and brown sugar until smooth. Stir in the vegetable oil, vanilla extract, and mashed bananas. Mix until well combined.
  • Add Pineapple and Coconut:
  • Fold the crushed pineapple, shredded coconut, and optional macadamia nuts into the wet mixture.
  • Combine Wet and Dry Ingredients:
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  • Pour into Pan:
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake:
  • Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:
  • Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
