Instructions
Preparation Steps
Preheat the oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
Add minced garlic and cook for another minute.
Add ground chicken to the skillet, cook until browned, breaking it apart with a spatula.
Stir in taco seasoning and diced tomatoes. Cook for another 5 minutes to let the flavors blend.
Arrange taco shells in a baking dish. Fill each shell with the chicken mixture.
Top each taco with shredded cheese. Bake in the preheated oven for 10 minutes or until the cheese is melted and bubbly.
Remove from oven and top with shredded lettuce and sour cream before serving.
Notes
For extra flavor, consider adding diced avocado or fresh salsa as toppings.
