  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tbsp taco seasoning store-bought or homemade
  • 1 can diced tomatoes drained
  • 12 small taco shells hard or soft
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup shredded lettuce
  • 1 cup sour cream for serving

Instructions

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  • Add minced garlic and cook for another minute.
  • Add ground chicken to the skillet, cook until browned, breaking it apart with a spatula.
  • Stir in taco seasoning and diced tomatoes. Cook for another 5 minutes to let the flavors blend.
  • Arrange taco shells in a baking dish. Fill each shell with the chicken mixture.
  • Top each taco with shredded cheese. Bake in the preheated oven for 10 minutes or until the cheese is melted and bubbly.
  • Remove from oven and top with shredded lettuce and sour cream before serving.

Notes

For extra flavor, consider adding diced avocado or fresh salsa as toppings.
