Prep the Zucchini:
Wash and slice zucchini into strips (lengthwise) or thick rounds.
Pat dry with a paper towel to remove excess moisture.
Season:
In a bowl, toss zucchini slices with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
Grill:
Preheat grill to medium-high heat (about 400°F / 200°C).
Place zucchini directly on the grates or use a grill basket.
Grill for 3–4 minutes per side, or until tender with nice grill marks.
Serve:
Remove from grill and serve immediately.
Garnish with grated Parmesan, a squeeze of lemon juice, or chopped herbs if desired.
