Ingredients
 

  • 2 –3 medium zucchinis sliced into ¼-inch thick strips or rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning or dried oregano/basil
  • Salt and pepper to taste
  • Optional garnish: grated Parmesan lemon juice, or chopped fresh herbs (parsley, basil)

Instructions

  • Prep the Zucchini:
  • Wash and slice zucchini into strips (lengthwise) or thick rounds.
  • Pat dry with a paper towel to remove excess moisture.
  • Season:
  • In a bowl, toss zucchini slices with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
  • Grill:
  • Preheat grill to medium-high heat (about 400°F / 200°C).
  • Place zucchini directly on the grates or use a grill basket.
  • Grill for 3–4 minutes per side, or until tender with nice grill marks.
  • Serve:
  • Remove from grill and serve immediately.
  • Garnish with grated Parmesan, a squeeze of lemon juice, or chopped herbs if desired.
