Instructions
Preparation Steps
In a large bowl, combine chicken pieces, olive oil, salt, pepper, and lemon juice. Toss to coat evenly.
Thread the chicken, bell peppers, and red onion onto skewers alternately.
Preheat the grill to medium-high heat.
Place skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through.
In a small bowl, mix all chimichurri sauce ingredients until well combined.
Serve the skewers hot, drizzled with the chimichurri sauce.
Notes
For extra flavor, marinate the chicken for at least 2 hours before grilling. Serve with grilled vegetables or a fresh salad.
