  • 1.5 lb chicken breast cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground
  • 2 tbsp lemon juice fresh
  • 1 red bell pepper cut into 1-inch pieces
  • 1 green bell pepper cut into 1-inch pieces
  • 1 red onion cut into wedges

Chimichurri Sauce

  • 0.5 cup fresh parsley finely chopped
  • 2 cloves garlic minced
  • 0.25 cup olive oil
  • 2 tbsp red wine vinegar
  • 0.5 tsp red pepper flakes
  • 0.5 tsp oregano dried
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground

Instructions

Preparation Steps

  • In a large bowl, combine chicken pieces, olive oil, salt, pepper, and lemon juice. Toss to coat evenly.
  • Thread the chicken, bell peppers, and red onion onto skewers alternately.
  • Preheat the grill to medium-high heat.
  • Place skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through.
  • In a small bowl, mix all chimichurri sauce ingredients until well combined.
  • Serve the skewers hot, drizzled with the chimichurri sauce.

Notes

For extra flavor, marinate the chicken for at least 2 hours before grilling. Serve with grilled vegetables or a fresh salad.
