  • 1.8 lb russet potatoes, cut into 1/4-inch fries
  • 1.5 tbsp olive oil
  • 1 tbsp cornstarch helps extra crispness
  • 1 tsp garlic powder
  • 0.75 tsp fine sea salt plus more to taste
  • 0.5 tsp black pepper
  • 0.5 tsp paprika optional, for color
  • 0.5 cup finely grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 0.25 tsp red pepper flakes optional, for heat

Instructions

Preparation Steps

  • Preheat the air fryer to 380°F while you prep the potatoes.
  • Slice potatoes into 1/4-inch sticks. Rinse, then soak in cold water for 10 minutes.
  • Drain and dry the potatoes very well with clean towels.
  • Toss fries with olive oil, cornstarch, garlic powder, salt, pepper, and paprika until evenly coated.
  • Air fry in a single layer for 15–18 minutes, shaking the basket every 5 minutes, until crispy and golden.
  • Transfer hot fries to a bowl. Immediately toss with Parmesan and parsley. Adjust salt and add red pepper flakes if desired. Serve at once.

Notes

Variation ideas: Swap Parmesan with Pecorino for a sharper bite, or drizzle a little truffle oil before serving. To keep batches crisp, hold cooked fries in a 200°F oven while you finish the rest. Leftovers reheat well in the air fryer at 360°F for 3–5 minutes.
