20 oz / 1.25 lbs pineapple rings, drained and patted dry (or fresh pineapple sliced into rings)

for frying (vegetable or canola)

Instructions
Heat Oil:
In a deep skillet or saucepan, heat oil to 350°F (175°C).
Line a plate with paper towels for draining.
Make the Batter:
In a bowl, whisk together flour, cornstarch, sugar, baking powder, cinnamon, and salt.
In another bowl, beat the egg with the milk (or sparkling water).
Combine wet and dry ingredients, mixing until smooth and lump-free.
Coat the Pineapple:
Pat pineapple rings completely dry with paper towels.
Dip each ring into the batter, letting excess drip off.
Fry:
Carefully lower each ring into the hot oil and fry 2–3 minutes per side, or until golden and crisp.
Remove and drain on paper towels.
Serve Warm:
Dust with powdered sugar or cinnamon sugar, or drizzle with honey.
Enjoy immediately while hot and crispy!
