Ingredients
 

  • For the Pie Crust:
  • 1 pre-made 9-inch pie crust or homemade
  • For the Filling:
  • 1 lb of fresh shrimp peeled, deveined, and chopped
  • 1 tablespoon of butter
  • 1 small onion finely chopped
  • ½ cup 0.25 lbs of bell pepper, diced (red or green)
  • 1 teaspoon of garlic minced
  • ½ teaspoon of Old Bay seasoning
  • ¼ teaspoon of salt
  • ¼ teaspoon of black pepper
  • ½ teaspoon of smoked paprika
  • 1 cup 0.5 lbs of shredded cheddar cheese
  • ½ cup 0.25 lbs of shredded Monterey Jack cheese
  • 3 large eggs
  • ¾ cup 0.4 lbs of heavy cream
  • ¼ cup 0.12 lbs of whole milk
  • 1 teaspoon of Dijon mustard
  • ½ teaspoon of hot sauce optional, for heat
  • 1 tablespoon of fresh parsley chopped

Instructions

  • Preheat the Oven:
  • Preheat your oven to 375°F (190°C).
  • Place the pie crust in a 9-inch pie dish, crimp the edges, and prick the bottom with a fork.
  • Pre-bake the crust for 10 minutes, then set aside.
  • Prepare the Shrimp Filling:
  • Heat butter in a skillet over medium heat.
  • Sauté the onion and bell pepper until soft, about 3-4 minutes.
  • Add the garlic and cook for another 30 seconds.
  • Stir in the chopped shrimp, Old Bay seasoning, salt, black pepper, and smoked paprika. Cook for 2-3 minutes until shrimp turn pink. Remove from heat and let cool slightly.
  • Mix the Egg Custard:
  • In a bowl, whisk together eggs, heavy cream, milk, Dijon mustard, and hot sauce (if using).
  • Assemble the Pie:
  • Sprinkle half of the shredded cheeses over the pre-baked crust.
  • Evenly spread the shrimp mixture on top.
  • Pour the egg custard over the filling.
  • Top with the remaining cheese and fresh parsley.
  • Bake:
  • Bake for 30-35 minutes, or until the center is set and the top is golden brown.
  • Let cool for 5-10 minutes before slicing.
  • Serve & Enjoy:
  • Garnish with extra parsley or a squeeze of fresh lemon for added brightness.
  • Serve warm with a side salad or fresh fruit for a refreshing contrast.
