  • 2 eggplants medium-sized, sliced
  • 1 cup all-purpose flour
  • 3 eggs beaten
  • 2 cups breadcrumbs Italian seasoned
  • 2 cups marinara sauce homemade or store-bought
  • 1 cup parmesan cheese grated
  • 2 cups mozzarella cheese shredded
  • 1 cup vegetable oil for frying

Instructions

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Slice the eggplants into 1/4-inch thick slices.
  • Dip each eggplant slice in flour, shaking off excess, then into beaten eggs, and finally in breadcrumbs to coat.
  • Heat vegetable oil in a large skillet over medium heat. Fry eggplant slices until golden brown on each side.
  • In a baking dish, spread a layer of marinara sauce. Layer fried eggplant, more marinara sauce, parmesan cheese, and mozzarella cheese. Repeat layers until ingredients are used, ending with cheese on top.
  • Bake in the preheated oven for 25-30 minutes, or until cheese is golden and bubbly.

Notes

Let the dish cool for a few minutes before serving. Enjoy with a fresh salad and a crusty loaf of bread.
