  • 0.25 teaspoon black pepper freshly ground
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh basil chopped, for garnish

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
  • In a large bowl, combine the shredded zucchini, flour, Parmesan cheese, and mozzarella cheese.
  • Stir in the beaten eggs, baking powder, salt, and pepper until well combined.
  • Transfer the mixture into the prepared baking dish and flatten with a spatula.
  • Bake in the preheated oven for 30-35 minutes, until the casserole is golden and cooked through.
  • Remove from oven and let cool slightly before cutting. Garnish with fresh basil before serving.

Notes
