  • 9 sheets lasagna noodles oven-ready
  • 2 tablespoons olive oil extra virgin
  • 1 pound chicken breast cooked and shredded
  • 2 cups baby spinach washed and dried
  • 1.5 cups ricotta cheese
  • 1 cup Parmesan cheese grated
  • 2 cups mozzarella cheese shredded
  • 4 cups milk whole
  • 0.5 cup butter unsalted
  • 0.5 cup all-purpose flour
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground
  • 0.25 teaspoon nutmeg ground

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  • Gradually whisk in the milk, continuing to stir until the sauce thickens. Add salt, pepper, and nutmeg.
  • In the prepared baking dish, spread a layer of béchamel sauce. Add a layer of noodles, then a portion of shredded chicken and spinach.
  • Dot with ricotta cheese, and sprinkle with Parmesan and mozzarella. Repeat the layers, finishing with béchamel and mozzarella on top.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly. Let it rest for 10 minutes before serving.
