  • 2 cloves garlic minced
  • 2 medium carrots peeled and chopped
  • 1 stalk celery chopped
  • 4 cups chicken broth low sodium
  • 30 ounces canned white beans drained and rinsed
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dried thyme
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground
  • 0.25 cup parsley fresh, chopped, for garnish

Instructions

Preparation Steps

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion, garlic, carrots, and celery. Sauté for 5 minutes until the vegetables are softened.
  • Add the chicken broth, white beans, lemon juice, thyme, salt, and pepper. Bring to a boil.
  • Reduce the heat and let it simmer for 20 minutes. Adjust seasoning if necessary.
  • Serve hot, garnished with fresh parsley.
