  • 4.5 cup seedless watermelon, cut into chunks
  • 2.5 tbsp fresh lime juice
  • 2 tbsp honey or agave nectar
  • 1 tbsp fresh mint, finely chopped optional
  • 0.13 tsp fine sea salt

Instructions

Preparation Steps

  • Prep the watermelon by cutting it into chunks; remove any stray seeds.
  • Blend watermelon, lime juice, honey, salt, and mint until completely smooth.
  • Taste and adjust sweetness or lime to your liking.
  • Pour the puree into popsicle molds, leaving a little space at the top.
  • Insert sticks and freeze until solid, about 6 hours or overnight.
  • To release, run warm water over the molds for a few seconds and gently pull out.

Notes

For a creamy twist, swirl 2–3 tbsp coconut milk into the blended mixture before freezing. Or add 1/2 cup sliced strawberries for a watermelon-berry pop. Store pops tightly covered in the freezer for up to 1 month.
