  • 1 cup cauliflower florets cut into small pieces
  • 1 cup carrots diced
  • 1 cup green peas fresh or frozen
  • 2 tablespoons vegetable oil
  • 1 cup coconut milk full-fat recommended
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 teaspoons cumin ground
  • 1.5 teaspoons coriander ground
  • 1 teaspoon turmeric ground
  • 1 teaspoon garam masala
  • 1 teaspoon salt or to taste
  • 0.5 cup cashew nuts soaked and ground to a paste

Instructions

Preparation Steps

  • Heat oil in a large pan over medium heat. Add onions and sauté until golden brown.
  • Add garlic and ginger, and stir for another 1-2 minutes until fragrant.
  • Stir in cumin, coriander, turmeric, and garam masala. Cook for another minute.
  • Add carrots, cauliflower, and peas. Mix well to coat the vegetables with the spice mixture.
  • Pour in the coconut milk and add the cashew paste. Stir to combine.
  • Simmer for 15-20 minutes or until the vegetables are tender. Adjust seasoning with salt as needed.

Notes

This korma pairs perfectly with steamed rice or naan bread. Adjust spices to taste.
