Ingredients

Main Ingredients

  • 1.5 cups butter unsalted
  • 1 cup brown sugar packed
  • 1 tsp vanilla extract
  • 35 pieces saltine crackers or enough to cover the baking sheet
  • 2 cups semi-sweet chocolate chips
  • 0.5 cup chopped pecans lightly toasted

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a 9x13-inch baking sheet with aluminum foil and spray with non-stick spray.
  • Arrange saltine crackers in a single layer to cover the entire baking sheet.
  • In a saucepan, melt the butter and brown sugar over medium heat, stirring until the mixture reaches a boil. Let it boil for 3 minutes without stirring. Remove from heat and stir in vanilla.
  • Pour the hot mixture evenly over the crackers and spread to cover completely.
  • Bake for 5 minutes in the preheated oven, or until the toffee is bubbly.
  • Remove pan from oven and immediately sprinkle chocolate chips over the top. Let sit for 5 minutes to soften, then spread into an even layer.
  • Sprinkle chopped pecans over the chocolate layer.
  • Cool in the refrigerator until set, then break into pieces and serve.

Notes

For an extra touch, try adding a sprinkle of sea salt on top before the chocolate sets.
