Preparation Steps
Preheat oven to 350°F (175°C). Line a 9x13-inch baking sheet with aluminum foil and spray with non-stick spray.
Arrange saltine crackers in a single layer to cover the entire baking sheet.
In a saucepan, melt the butter and brown sugar over medium heat, stirring until the mixture reaches a boil. Let it boil for 3 minutes without stirring. Remove from heat and stir in vanilla.
Pour the hot mixture evenly over the crackers and spread to cover completely.
Bake for 5 minutes in the preheated oven, or until the toffee is bubbly.
Remove pan from oven and immediately sprinkle chocolate chips over the top. Let sit for 5 minutes to soften, then spread into an even layer.
Sprinkle chopped pecans over the chocolate layer.
Cool in the refrigerator until set, then break into pieces and serve.
Notes
For an extra touch, try adding a sprinkle of sea salt on top before the chocolate sets.
