  • 1.5 cups tri-color rotini pasta uncooked
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup red bell pepper diced
  • 0.25 cup red onion thinly sliced
  • 0.5 cup kalamata olives sliced
  • 0.25 cup parmesan cheese grated
  • 0.25 cup parsley chopped
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper freshly ground

Instructions

Preparation Steps

  • Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
  • In a large bowl, combine cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, olives, parmesan cheese, and parsley.
  • In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and black pepper.
  • Pour dressing over the pasta salad and toss to combine.
  • Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

For a more filling salad, add grilled chicken or chickpeas.
