Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until the onion is translucent.
Add ground beef to the pot, cook until browned and crumbled. Drain excess fat if necessary.
Stir in beef broth, diced tomatoes with juice, sliced carrots, green beans, and corn. Bring to a boil.
Reduce heat to low, cover, and let simmer for 20 minutes or until vegetables are tender.
Add dried basil, oregano, black pepper, and chopped kale. Simmer for an additional 5 minutes.
