  • 1 pound ground beef lean
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth low sodium
  • 28 ounces diced tomatoes with juice
  • 1 cup carrots sliced
  • 1 cup green beans trimmed and cut into 1-inch pieces
  • 1 cup corn kernels fresh or frozen
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil
  • 2 cups kale chopped

Instructions

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until the onion is translucent.
  • Add ground beef to the pot, cook until browned and crumbled. Drain excess fat if necessary.
  • Stir in beef broth, diced tomatoes with juice, sliced carrots, green beans, and corn. Bring to a boil.
  • Reduce heat to low, cover, and let simmer for 20 minutes or until vegetables are tender.
  • Add dried basil, oregano, black pepper, and chopped kale. Simmer for an additional 5 minutes.
