  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon cumin ground
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground
  • 0.25 cup fresh cilantro chopped
  • 1 cup salsa mild or hot, as preferred
  • 1 cup cheddar cheese shredded

Instructions

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix together the cumin, chili powder, garlic powder, onion powder, salt, and black pepper.
  • Rub the chicken breasts with olive oil, then sprinkle both sides with the spice mixture.
  • Place the chicken breasts in a baking dish and cover them with the salsa.
  • Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and no longer pink inside.
  • Sprinkle the shredded cheddar cheese over the chicken and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh cilantro before serving.
