  • 1.5 lb flank steak or skirt steak
  • 8 pieces corn tortillas
  • 0.25 cup olive oil
  • 3 tbsp lime juice freshly squeezed
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup chopped cilantro for topping
  • 1 cup diced onion for topping

Preparation Steps

  • In a bowl, combine olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper. Mix well.
  • Place the flank steak in a large dish and pour the marinade over the meat. Cover and refrigerate for at least 30 minutes.
  • Preheat a grill to medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes on each side, or until desired doneness.
  • Remove the steak from the grill and let it rest for 5 minutes before slicing thinly against the grain.
  • Warm the corn tortillas on the grill for about 30 seconds on each side.
  • Serve the sliced steak on the warm tortillas and top with chopped cilantro and diced onion.

Notes

For extra flavor, try adding avocado slices or a squeeze of extra lime juice before serving.
