Instructions
Preparation Steps
In a large pot over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onion is tender. Drain any excess fat.
Add the diced tomatoes, black beans, corn, taco seasoning, chicken broth, and ranch seasoning mix to the pot. Stir to combine.
Bring the mixture to a boil, then reduce heat to simmer for 25-30 minutes, stirring occasionally.
Serve hot, garnished with chopped cilantro. On the side, offer sour cream and shredded cheddar cheese for topping.
Notes
This soup can be made in advance and stored in the refrigerator for up to 3 days. Reheat thoroughly before serving.
