  • 2 tbsp tomato paste
  • 3 tbsp water add more for a thinner sauce
  • 2 tbsp distilled white vinegar apple cider vinegar works too
  • 1.25 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika use sweet paprika for milder flavor
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp dried oregano crush lightly between fingers
  • 0.75 tsp kosher salt to taste
  • 0.25 tsp black pepper
  • 1 tsp granulated sugar balances acidity
  • 0.125 tsp cayenne pepper add more for heat

Instructions

Preparation Steps

  • Whisk tomato sauce, tomato paste, water, and vinegar in a small saucepan.
  • Stir in chili powder, cumin, paprika, garlic powder, onion powder, oregano, sugar, salt, pepper, and cayenne.
  • Bring to a gentle simmer over medium heat. Cook 6–8 minutes, stirring often, until slightly thickened.
  • Taste and adjust seasoning. Add a splash of vinegar for tang or a pinch of sugar for balance.
  • Cool 5 minutes. Serve warm or chill until cold for the best flavor.

Notes

For a smoky kick, blend in 1–2 tsp adobo sauce from canned chipotles. For a creamy version, whisk in 2 tbsp sour cream just before serving. Store in a sealed jar in the fridge for up to 1 week; thin with a splash of water if it thickens.
