  • 1 lb ground beef lean
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes 15 oz
  • 1 can kidney beans drained and rinsed, 15 oz
  • 1 can black beans drained and rinsed, 15 oz
  • 2 cups beef broth low-sodium
  • 1 cup corn kernels frozen or canned
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper to taste
  • 0.5 cup shredded cheddar cheese for serving
  • 0.25 cup sour cream for serving
  • 0.25 cup sliced green onions for garnish

Instructions

Preparation Steps

  • In a large pot over medium heat, brown the ground beef with the chopped onion and minced garlic until the beef is cooked through. Drain excess fat.
  • Stir in the taco seasoning, cumin, paprika, salt, and pepper.
  • Add the diced tomatoes, kidney beans, black beans, beef broth, and corn. Stir to combine.
  • Bring to a simmer and cook for 20-25 minutes, stirring occasionally.
  • Serve hot, topped with shredded cheddar cheese, a dollop of sour cream, and sliced green onions.

Notes

Feel free to adjust the spices and heat to match your taste preferences. This recipe can also be made in a slow cooker.
