  • 1.5 lb ground beef
  • 1 package taco seasoning mix
  • 0.66 cup water
  • 1 can diced tomatoes with green chilies undrained
  • 1.5 cup shredded cheddar cheese
  • 1 can refrigerated biscuits 8-count
  • 0.25 cup sour cream for serving, optional
  • 0.25 cup chopped green onions for garnish, optional

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Stir in taco seasoning, water, and canned tomatoes with chilies. Simmer for 5 minutes.
  • Transfer the beef mixture to an ungreased 9x13-inch baking dish. Sprinkle with shredded cheese.
  • Separate biscuits and cut each into quarters. Place the biscuit pieces on top of the cheese.
  • Bake for 20-25 minutes or until biscuits are golden brown.
  • Serve topped with sour cream and green onions, if desired.

Notes

Try adding a can of black beans for extra protein and fiber.
