Instructions
Preparation Steps
Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, cinnamon, and salt.
Stir in the melted butter until the mixture resembles coarse crumbs. Reserve about 3/4 cup of the mixture for the crumb topping.
Press the remaining oat mixture evenly into the bottom of the prepared baking pan to form a crust.
In a separate bowl, combine chopped strawberries, granulated sugar, cornstarch, and lemon juice. Mix well.
Spread the strawberry mixture evenly over the crust in the baking pan.
Sprinkle the reserved crumb mixture over the strawberry layer.
Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the strawberries are bubbling.
Allow to cool completely in the pan before slicing into bars.

These bars can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week.
