  • 1.5 cups rolled oats use old-fashioned oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar packed
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon cinnamon ground
  • 0.25 teaspoon salt
  • 0.75 cup unsalted butter melted
  • 2 cups strawberries chopped
  • 0.5 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice fresh

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, cinnamon, and salt.
  • Stir in the melted butter until the mixture resembles coarse crumbs. Reserve about 3/4 cup of the mixture for the crumb topping.
  • Press the remaining oat mixture evenly into the bottom of the prepared baking pan to form a crust.
  • In a separate bowl, combine chopped strawberries, granulated sugar, cornstarch, and lemon juice. Mix well.
  • Spread the strawberry mixture evenly over the crust in the baking pan.
  • Sprinkle the reserved crumb mixture over the strawberry layer.
  • Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the strawberries are bubbling.
  • Allow to cool completely in the pan before slicing into bars.

Notes

These bars can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week.
