  • 6 whole strawberries hulled and sliced
  • 10 leaf fresh mint leaves plus extra for garnish
  • 2 tablespoon granulated sugar or simple syrup to taste
  • 2 ounce fresh lime juice freshly squeezed
  • 4 ounce white rum
  • 8 ounce club soda chilled
  • 2 cup ice crushed or cubes
  • 4 slice strawberries for garnish
  • 4 wedge lime for garnish

Preparation Steps

  • In a sturdy pitcher or cocktail shaker, add sliced strawberries, mint leaves, and sugar. Muddle gently until the strawberries release their juices and the mint is fragrant.
  • Pour in the fresh lime juice and white rum. Add ice, seal, and shake vigorously for 10 seconds.
  • Fill two glasses with ice and divide the muddled mixture between them, including some fruit and mint.
  • Top each glass with club soda and gently stir to combine.
  • Garnish with strawberry slices, lime wedges, and a sprig of mint. Serve immediately.

Notes

Adjust sweetness by adding more or less sugar or simple syrup. For a mocktail, skip the rum and add extra club soda. To scale up for a crowd, multiply all ingredients and build in a pitcher.
