  • 4 oz cream cheese, softened
  • 8 oz whipped topping, thawed
  • 8 oz crushed pineapple, well drained
  • 1.5 cup chopped fresh strawberries
  • 2 cup mini marshmallows
  • 1 tsp vanilla extract
  • 1 tsp lemon juice

Instructions

Preparation Steps

  • Beat cream cheese in a large bowl until smooth and fluffy.
  • Blend in cottage cheese and sprinkle in the dry strawberry gelatin. Mix until evenly pink.
  • Fold in the thawed whipped topping gently to keep it airy.
  • Stir in the drained pineapple, chopped strawberries, and mini marshmallows.
  • Add vanilla and lemon juice. Fold just until combined.
  • Chill for at least 1 hour to set. Spoon into bowls and serve cold.

Notes

Variation: Swap in raspberries or mix half raspberries with strawberries. For extra crunch, sprinkle chopped toasted pecans just before serving. Lighten it up by using light cottage cheese, sugar-free gelatin, and reduced-fat whipped topping. Store covered in the fridge up to 3 days; stir gently before serving.
