- Blend in cottage cheese and sprinkle in the dry strawberry gelatin. Mix until evenly pink.
- Fold in the thawed whipped topping gently to keep it airy.
- Stir in the drained pineapple, chopped strawberries, and mini marshmallows.
- Add vanilla and lemon juice. Fold just until combined.
- Chill for at least 1 hour to set. Spoon into bowls and serve cold.

Variation: Swap in raspberries or mix half raspberries with strawberries. For extra crunch, sprinkle chopped toasted pecans just before serving.
