Instructions

Preparation Steps

  • In a medium saucepan, bring water and milk to a gentle simmer over medium heat.
  • Stir in steel-cut oats and salt. Reduce heat to low, then simmer uncovered, stirring occasionally, until creamy and tender, 20 to 25 minutes.
  • Stir in cinnamon, vanilla, and butter if using. Sweeten with maple syrup to taste.
  • Remove from heat, cover, and rest 2 minutes. Spoon into bowls and top with berries and walnuts.

Notes

For thicker oats, cook a few minutes longer; for looser oats, whisk in a splash of hot water or warm milk at the end. Leftovers keep well in the refrigerator up to 4 days—reheat with a bit of milk or water to loosen.
