Instructions
Preparation Steps
Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water and drain the rest.
In a blender or food processor, combine avocados, spinach, olive oil, garlic, lemon juice, salt, and black pepper. Blend until smooth.
Toss the cooked pasta with the avocado-spinach mixture, adding reserved pasta water a little at a time until desired creaminess is reached.
Serve immediately with optional Parmesan cheese and red pepper flakes sprinkled over the top.
