  • 8 oz spaghetti or any pasta of choice
  • 2 ripe avocados peeled and pitted
  • 2 cups fresh spinach packed
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground
  • 0.25 cup Parmesan cheese grated, optional
  • 0.5 teaspoon red pepper flakes optional

Instructions

Preparation Steps

  • Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water and drain the rest.
  • In a blender or food processor, combine avocados, spinach, olive oil, garlic, lemon juice, salt, and black pepper. Blend until smooth.
  • Toss the cooked pasta with the avocado-spinach mixture, adding reserved pasta water a little at a time until desired creaminess is reached.
  • Serve immediately with optional Parmesan cheese and red pepper flakes sprinkled over the top.

Notes

For added protein, top with grilled chicken or shrimp.
