  • 1.5 cups graham cracker crumbs about 10 full sheets
  • 0.5 cup unsalted butter melted
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1.5 cups mini chocolate chips
  • 1.5 cups mini marshmallows

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C) and line a 9x13 inch baking dish with parchment paper.
  • In a medium bowl, mix graham cracker crumbs and melted butter until combined. Press mixture evenly into the bottom of the prepared baking dish.
  • In a separate bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a large bowl, beat together brown sugar, granulated sugar, and eggs until smooth. Stir in vanilla extract.
  • Gradually add dry ingredients to wet ingredients and mix until just combined. Fold in chocolate chips and marshmallows.
  • Spread the cookie batter over the graham cracker crust in the baking dish.
  • Bake for 25 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Allow to cool completely in the pan on a wire rack before slicing and serving.

Notes

Be careful not to overbake as the bars will continue to firm up as they cool.
