Instructions
Preparation Steps
Preheat your smoker to 225°F (107°C).
Rub the chicken thighs with olive oil, salt, pepper, paprika, garlic powder, and onion powder.
Place the chicken, potatoes, and carrots in the smoker, making sure they are evenly spaced.
Add wood chips to the smoker and cook for approximately 2 hours, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove from the smoker and let rest for 10 minutes before serving.
Notes
For a more intense smoky flavor, soak the wood chips before use.
