  • 4 lbs chicken thighs bone-in, skin-on
  • 2 tbsp olive oil
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground
  • 1 tbsp paprika smoked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 lbs potatoes cut into quarters
  • 0.5 lbs carrots peeled and sliced
  • 1 cups wood chips hickory or applewood

Instructions

Preparation Steps

  • Preheat your smoker to 225°F (107°C).
  • Rub the chicken thighs with olive oil, salt, pepper, paprika, garlic powder, and onion powder.
  • Place the chicken, potatoes, and carrots in the smoker, making sure they are evenly spaced.
  • Add wood chips to the smoker and cook for approximately 2 hours, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Remove from the smoker and let rest for 10 minutes before serving.

Notes

For a more intense smoky flavor, soak the wood chips before use.
